to breathe, to release, to soak.

How the weather is outside.
The seasons that change the landscape and the menu,
the harvest and what it supplies. You have to wait for the seasonal
culture, let it mature, respect the rains and the sun,
the soil before the salt. Shorten the distance between the meadow
and the plate, between spoon and eating. We wait for the watermelon,
the fig, the late fruit. Wait for the tomato and the pea,
the watercress, so that everything remains tender in the earth.

Plus seasoning time.
From the garlic-vine marinade, the fleur de sel and nothing else.
From the lemon vinaigrette, the basil coulis.

And the time that has already passed.
From mature wisdom, the palate that refines, from the hand to
